- Drizzle some olive oil into a large deep frying pan, heat on a low heat.
- Dice the onion, chop the pepper and chorizo into chunks and slice the chilli. Throw all into the pan and stir fry for 5 mins
- Quarter the potatoes and add them to the pan, fry for a minute and add the tin of tomatoes.
- Stir well then add the two fish fillets. Season to taste and cover for 7 minutes, turn the heat down to a simmer.
- Serve with green veg and top with shredded fresh basil
