- Once all the apples are pealed, begin cutting them into wedges.
- Cut out the harder inner part of the core off each wedge.
- Place all the wedges in a pot.
- Add the water.
- Drop in the vanilla bean. (I reserve one special bean just for my applesauce.)
- Cover, turn the burner to medium heat and simmer for 25 minutes.
- Mash the semi-tender wedges with a masher or fork and continue to simmer for another 20 minutes, covered.
- Then mash apples for the final time.
- Add the sugar and salt before removing the vanilla bean.
- Allow to cool 15 minutes before serving. Try as is or as a topping for ice cream. Also great with savory pork roasts.
