  1. Boil the diced potatoes in salted water until they fall apart when pierced with a fork. 30 minutes or so.
  2. Drain potatoes. Add milk, butter, and spices. Smash by hand or whip with a hand mixer.
  3. Fold in the green chilies & cheese.
  4. Top with a dusting I smoked paprika, if desired.
  5. I served this with my chipotle chicken recipe and spooned the sauce over the potatoes! Yummmm
