Push chicken from the center of the wok. In a wok fry heat, the oils, add the chicken and cook until nicely sealed, add the ginger, potatoes, red pepper and baby corn and continue frying for a couple more minutes. Pour in the coconut milk, water, lime juice and bring to a simmer. Finally add the spring greens and wilt.

Saute the diced onions for about 2 minutes, add the ginger/ garlic paste and saute for another minute. Add the diced veggies, soy and oyster sauce, seasoning cube, curry and thyme. Salt to balance the taste. Add the fried chicken and stir.
- Add the fried chips. Stir everything together and allow to steam for about 1 minute. Finally add spring onions to garnish. Serve hot!
