The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

  17. Take 1 Mesquite seasoning (McCormick)
  18. Make ready 1 Dried oregano
  19. Take 1 Dried cilantro
  20. Make ready 1 dash Salt and pepper
  21. Prepare 1 Olive oil
  22. Get 1 Cumin powder

Enchiladas can be filled with various ingredients, including meats, cheese, beans, potatoes, vegetables or combinations. Sauces can also be used to cover enchiladas, including chili-based sauces, such as salsa roja, various moles, or cheese. They can be prepared simply with just cheese, or be spruced up by adding a little bit of beef or chicken to appeal to the meat-eaters in your household. Pour in the red sauce, chicken broth, cilantro, salt and pepper.

Instructions to make Enchiladas:
  1. Finely chop the red bell pepper, onion, garlic, and mushrooms. Grate the cheeses and mix together.
  2. Peel the tomato by blanching in hot water for a few seconds and then cut into 1 cm cubes. Remove the stems from the fresh cilantro and chop.
  3. Add olive oil to a frying pan. Heat the finely chopped garlic until fragrant. Add ground meat and stir fry.
  4. When the meat is cooked through, and the excess fat has rendered, remove from heat. Preheat the oven to 355F/180℃.
  5. Add finely chopped red bell pepper, onion, mushrooms, and stir fry. Add the seasonings, taste, and adjust if needed.
  6. Add enough enchilada sauce to thicken the filling (1/3 of the can).
  7. Put some of the filling from Step 5 on the tortillas and top with cheese. Roll them up carefully so the filling won't spill out.
  8. Place the rolled tortillas on a baking tray and top with fresh cilantro, tomato, and remaining cheese.
  9. Pour on the rest of the enchilada sauce, put in the oven and bake for 20-30 minutes.
  10. Perfectly baked.
  11. Arrange on a plate with vegetables like cilantro or lettuce, beans, and rice, top with salsa and sour cream, and it's done.

Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down. Then pour any remaining sauce on top of the enchiladas and sprinkle on some extra cheese. Bake uncovered until the enchiladas are cooked through and the edges of the tortillas get slightly crispy. Top with remaining enchilada sauce and cheese.
