  1. Firstly, peel and cut your potatoes into bit sized chunks. Get your oven pre-heating to 220C
  2. Then parboil them in lightly salted water for about 10 minutes. Don't over boil them. We want them firm still.
  3. Liberally coat your baking tray with olive oil and butter, then place the tray in the oven for 60 seconds or so, just to melt the butter.
  4. Next, evenly spread the potatoes on the tray. Roll each one individually and make sure it's well coated with the olive oil and butter.
  5. Then sprinkle some thyme and rosemary over the potatoes and place the tray in the oven for 20 minutes.
  6. Pull out the tray and rotate each piece, then put back in the oven for another 20 minutes.
  7. Remove when they look golden and crispy, and serve.
