- Place the beef on top of the veggies and drizzle with olive oil.
- Place in oven and immediately lower the oven temperature to 200ºC.
- Cook for 30min.
- Add veggies at this point if desired (I added potatos and trunips).
- Add a couple of dashes of white wine and cook for another 45min.
- check on your roast occasionally and baste and mix veggies if needed
- Jamie Oliver recommends letting roast rest at room temperature for 15min before serving. Covered with tin foil snd a tea towel.
