Hey everyone, it’s Drew, welcome to my recipe page. Today, I will show you a way to make a special dish, accosted pig. One of my favorites. This time, I’m gonna make it a little bit unique. This is gonna smell and look delicious.

Accosted Pig is one of the most popular of recent trending meals on earth. It is simple, it’s fast, it tastes yummy. It is appreciated by millions every day. Accosted Pig is something which I have loved my entire life. They’re fine and they look fantastic.

To begin with this recipe, we must first prepare a few components. You can have accosted pig using 7 ingredients and 10 steps. Here is how you can achieve it.

The ingredients needed to make Accosted Pig:
  1. Make ready 5 lb Pork loin…. adjust size to need
  2. Take 1 lb Chorizo sausage link
  3. Make ready 1 1/2 cup Dry rub mix of choice
  4. Get Glaze
  5. Make ready 1/4 cup Yoshida (Hoisin) sauce more or less
  6. Prepare 1/4 cup Strawberry preserves more or less
  7. Prepare 1/4 cup Apple Butter more or less
Steps to make Accosted Pig:
  1. Run a thin bladed carving knife into the loin lengthwise at one end towards the center. Turn the loin around and do the same thing making the ends meet in the center making one hole in the middle ;-).
  2. Try not to butterfly the loin.
  3. Stuff the chorizo in one end headed to the other end. (Have your spouse help you if needed :-D) Be sure and send me the comments.
  4. Spray with butter flavor cooking spray and coat loin with dry rub.
  5. Place in smoker with medium smoke (more or less) for 1 hour.
  6. Remove from smoker and move to cooking sheet and put in oven covered loosely with foil for 1-1.5 hours at 325° looking for 155° internal temp in center of loin. The smoker step can be avoided if desired but I like it! The pink "smoke ring" on the outside in the pic is a result of the smoker.
  7. FOR THE GLAZE, add all ingredients to pan on medium heat until warm and combined.
  8. Remove foil and lightly coat with some of the glaze.
  9. Put back in oven allowing to heat up for about 10 minutes at 425° bubbling up glaze.
  10. Remove from oven, allow to rest for 15 min. Slice 1/2 to 3/4 inch thick and prepare to be worshipped. Add additional glaze as needed. Spoon on additional glaze add desired.
