  1. Rinse potato slices in water, set aside.
  2. Mix butter and flour in pot on med. heat 1 minute. Add s&p, add milk all at once. Bring to low boil. Boil 1 minute. Remove from heat. Add onion & pepper. Add cheese, stir to melt.
  3. Spread some sauce mixture in 9×12 greased baking dish. Top with 1 layer potatoes, then some ham. Repeat 2 more times ending with sauce.
  4. Bake 350° for 1 hr. Remove foil. Bake additional 40 mins. Add more cheese to top in last 5 min. if desired.
  5. Let cool 10 min. before serving.
