- Add the onion and cook for 5-6 minutes or until beginning to soften.
- Add the red pepper and continue to cook for a further 5 minutes.
- Add the chillies, garlic and spices and cook for a further 2 minutes stirring continuously
- Stir in the chopped tomatoes, passata, tomato puree and crumble over the stock cube and bring to a gentle simmer for 8 minutes stirring occasionally.
- Stir in the kidney beans and cook over a gentle heat for a further 10 minutes. Season to taste and serve with rice.
