I was inspired and decided to do a slightly different version with these purple potatoes and black beans I had in the pantry.

- Then add the cilantro and stir for 1 minute. Season with the dry ground coriander seeds, chili and salt to taste.
- Add the potatoes and mix well until all the ingredients have combined together. Remove from the heat
- Stir in the lemon juice
- Garnish the dish as desired.
